Before your favorite spirit arrived in your glass, do you know the long journey it took, even before the liquid was distilled? As global drinkers, we have a responsibility to understand where our spirits come from. Using the case study of cachaça produced in the south of Brazil, we'll look at the direct link between a distilled spirit and the plight of tropical forests. Brazil is one of the few places on Earth that implements woods other than oak to age its national spirit. Following the chain of custody of these precious trees from the jungle to the cooper to the cachaça producer reveals volumes about how we can responsibly produce and consume global spirits—and how we can go even further by actively enriching forest ecosystems along the way.
