Owner and Chef
Chef John Bates began cooking at the age of nine while on hunting trips with his father. Some of his most fond memories include peeling and dicing potatoes at the campsite during hunting season. John began cooking professionally while still a teenager. Upon completing high school he attended culinary school at Del Mar College in his native town of Corpus Christi where he’d meet his future business partner, Brandon Martinez.
Prior to launching the Noble Sandwich Co. in September 2010, John was involved with two well-known Austin restaurants serving as sous chef at Wink and as executive chef at Asti. In 2007, John and Brandon reconnected in Austin; a defining moment that led to the creation of Noble Sandwich Co.
Noble Sandwich Co., now with three locations, has received national accolades as one of the best sandwich shops in the U.S. Their refined approach to creating scratch-made food has propelled them to sandwich stardom. Noble Sandwich Co. has received a slew of national press and has appeared on “Diners, Drive-ins and Dives”. Chefs Bates and Martinez also continue to host small, intimate dinners allowing both chefs to showcase their finer dining side.
