Chef Paredes' unique flavors come from a unique life of being born in Michoacana, Mexico and then being raised in the United States, Texan to the bone. He is presently the chef at Gallotoro Cocina, a mobile pop-up kitchen, while he works to establish his passion project within Carnitas Lonja, to be opened later this year.
